TOMATO, CORN AND AVOCADO SALAD (V, DF, GF, NF)

Tomato, corn and avocado salsa

INGREDIENTS (Serves 4)

• 1 corn cob (can be substituted for corn kernels)

• 1 avocado, cubed

• 2 tbsp fresh lime juice

• 2 tubs cherry/grape tomatoes, halved

• 2 spring onions, sliced


METHOD

Stand cob in a large wide bowl; with a sharp knife, carefully slice downward to release the kernels. Discard cob. Add tomatoes, avocado, spring onions, lime juice, and a splash of olive oil to bowl. Season with salt and pepper, and toss gently to combine
